The olives are carefully cold pressed immediately after picking and the olive oil is stored underground in stainless steel drums to maintain its fresh, delicate flavor and well-balanced, medium body. We believe so strongly in the benefit of olive oil production that we are dedicating $1 for every bottle sold to planting an olive tree for the people of Palestine.
